Is 4:5 the same as 3:4?

No. At the same 1080 px width, 3:4 is 90 px taller. Changing the shape changes which edges remain inside the crop.

Will my profile grid show the entire portrait?

Not necessarily. Instagram controls the profile-grid preview and other display crops. This tool exports the selected pixels and does not control the platform’s presentation.
